How do officials mark themselves unavailable?

Your games board, assignments, crews, roster, and settings.

Officials block their own dates in their portal, under My Availability: a whole day, part of a day (a From and To time), or a weekday every week. You cannot enter availability for them on the dashboard. Ask them to add it in their portal.

You see their blocks in the officials list on each game:

A block that covers the game time shows as BLOCKED with their reason. You can still assign them after you confirm.
A part-day block that misses the game time shows in small print as a heads-up, and they stay available.

If an official works for more than one assignor, every one of their assignors sees the same blocks.
